This Nilagang Baka or Boiled Beef is one of the simplest dishes you will encounter yet so flavourful once done. I love the fact that this one-pot meal requires more waiting than effort. It’s so simple because the only main ingredients are beef, onion, water and vegetables. This is usually made out of bony beef part like beef ribs or beef neck as the bone helps in adding flavour to the soup together with onions. And hey, this dish is perfect for chilly winter days.
Beef shanks : 1 pound
Beef neck or ribs : 1 pound
Potatoes : 2 medium, chopped
Onion : 2 medium, chopped
Peppercorns : 1 tablespoon
Cabbage : 1 small, cut into wedges
Green beans : 8 to 10 pieces (bagiuo beans)
Fish sauce : 1 tablespoon
Spring onions (optional)
- In a pot, combine beef shanks, beef neck / ribs and enough water to cover. Over medium heat, bring to a boil and simmer for 1 hour until shanks are fork-tender and beef is nearly falling apart from the bones
- Once broth clears of scum, add onions and peppercorns. Lower heat, cover and cook for additional 2-3 minutes . Add more water as needed during cooking to maintain about 5 to 6 cups.
- Add potatoes, green beans and cabbage and cook for another 3 to 5 minutes or until vegetables are tender yet crisp. Season with fish sauce. Garnish with chopped green onions, if desired, and serve hot.
